Cook: Trai Su (Chayote) Salad

Servings: 4

Main ingredients:
2 Chayotes (we found this at Superior)
2 tablespoon salt (to soak)
Tap water (to soak)

Dressing:
1/2 lemon squeezed
1 garlic clove minced (or powder)
1/4 onion slices or as desired (or powder)
1 tablespoon sugar
Msg as desired
Pepper as desired
2 teaspoon fish sauce (optional)
1/4 cup mint leaves (optional)
1/4 crushed peanuts (optional)

Step 1: Rinse and Peel
Rinse and peel Chayotes, it’s OK if you can not peel all the skin, especially from the crevices. In a big bowl with the peeler, slice around Chayotes into thin slices and toss the seed. This step will make your hands gooey and sticky. Just wash your hands with soap and warm water!

Alternative: you can slice them into thin strips.

Step 2: Soak
Soak sliced Chayotes in salt water for 20 mins. This removes the gooey layers from the fruit. Set aside (optionally place it in the fridge to chill).

Step 3: Dressing
Mince the garlic, slice the onion, squeeze the lemon, and combine with sugar, fish sauce, msg, and pepper in a small bowl and mix well.

Alternative: combine garlic & onion powder, squeezed lemon juice, sugar, fish sauce, msg, and pepper in a small bowl and mix well.

Step 4: Rinse Again!
After 20 mins, return to Chayotes and dump out the salt water. Give the Chayotes a good rinse and drain well.

Step 5: Combine and Enjoy!
Pour the dressing over Chayotes and toss well. Sprinkle mint leaves and crushed peanuts over, serve, and enjoy!
